This is basically a sponge cake embellished with frosting sugar and desiccated coconut. It�s a favourite BYO (bring your own) desert to parties and barbeques and a good money raiser used by the Girl Guides Association.
RECIPE:
Start with a square or rectangular shaped basic sponge cake which you can either buy or bake. Proceed to divide the cake into blocks and ice all sides with the frosting. Then roll in desiccated coconut (fresh if you can find it). Allow to dry on a wire rack
Frosting
2 cups icing sugar
1 tablespoon boiling water
1 tablespoon vanilla essence
2 tablespoons cocoa
Method
Sift icing sugar into bowl.
Add boiling water and vanilla essence to cocoa.
Stir cocoa mixture into icing sugar and mix well.
