ANZAC Biscuits

This biscuit played a vital role in Australia�s war effort during the Great War (WW 1). It was baked by women stationed in Australia as a treat for soldiers abroad to maintain high morale. It is called the ANZAC Biscuit in honour of the Australian and New Zealand Army Corp (ANZAC) who fought and died in the Gear War.



Ingredients:

1 cup plain flour
1 cup rolled oats
� cup desiccated coconut  
� cup sugar
125 g (4 and 3/8 oz) butter
2 tablespoons golden syrup
� teaspoon bicarbonate of soda
1 tablespoon boiling water
Method

Mix the sifted flour, oats, coconut and sugar. Combine butter and syrup, stir over low heat until melted. Combine the bicarbonate of soda and hot water and add to the melted butter mixture. Stir in the dry ingredients and mix well. Put teaspoon size balls of the mixture on a lightly greased oven tray, allowing room for spreading. Bake at 150 C (300 F) for 20 mins. Loosen on trays while warm, then allow to cool. This recipe makes about 35 bikies (biscuits, mate)
